RISI E BISI (rice and peas).

This traditional Venetian dish is tastiest in springtime when peas are fresh and plentiful.
It’s not a really risotto but a thick soup.
Crispy bacon slices add a fabulous crunch to risi e bisi.

INGREDIENTS SERVINGS 4

Combine the baking mix and salt in a mixing bowl, then set it aside. in another small ball or measuring cup, warm 1/2 cup os water just slightly. Stir in the sugar and yeast, then allow the mixture to bloom for 5 to 10 minutes.

3 cups isiBisi baking mix, packed
2 Tsp salt
1 cup + 2 water
2 Tsp active dry yeast
1 Tsp sugar
2 ½ Tbsp EVOO
rice flour for dusting

This is a thick and creamy soup with potato and broccoli without cream but with a light besciamella (isiBisi gluten free dough mix flour and milk)
Philadelphia just adds a little touch of flavor.

I usually prefer to use Swiss Brown mushrooms because they have more flavour than plain white mushrooms.

Use any long or short shape of pasta. I have a preference for fettuccine for creamy pastas because there’s more surface area for the creamy sauce to cling to!
